Slow Cooker Short Ribs
TIP: For best results, salt your short ribs up to an hour before cooking, let them come to room temperature and pat them dry before browning.
TIP: After 7 hours of cooking check to ensure the ribs are to desired level of tenderness, add additional cook time if needed.

Step-by-step instruction without your screen going to sleep
- 4-5 pounds beef short ribs, bone-in (approximately 8-10 pieces)
- 1 teaspoon Kosher salt, plus more as desired
- 2 tablespoons olive oil
- 2 small yellow onions, cut into 1/2-inch pieces
- 3 large carrots, peeled, cut into 1/2-inch pieces
- 2 celery stalks, leaves removed, cut into 1/2-inch pieces
- 3 cups beef stock
- 1 1/2 cups dry red wine
- 1 tablespoon tomato paste
- 1 tablespoon dried rosemary
- 2 tablespoons cornstarch
- 1 tablespoon water

Step 1
On a large cutting board season short ribs with kosher salt, set aside.

Slide the Combi Cooker Pan into Level 1. With the door open, flip the SmartSwitch to AIRFRY/STOVETOP. Select SEAR/SAUTE and set temperature to HI. Press START/STOP and let pan preheat in unit for 5 minutes.

After 5 minutes, slide out pan, add 1 tablespoon of olive oil and 4-5 Short Ribs to the pan. Slide pan back into unit, and with the door open, brown the short ribs for 3 minutes on the top and bottom. Remove the browned short ribs from the pan and repeat with the remaining short ribs.

Press START/STOP to turn off unit and remove the Combi Cooker Pan from the unit and place on a heat proof surface.

Add vegetables, beef stock, wine, tomato paste, dried rosemary and 1 teaspoon salt to the pan and stir to combine. Add the browned short ribs to the pan ensuring they are mostly submerged in the liquid.

Return pan to Level 1 and close door. Select SLOW COOK, set temperature to LO, and set time to 7 hours. Press START/STOP to begin cooking.

When cooking is complete, remove pan from the unit and then remove the cooked short ribs from the liquid, set aside.

Remove vegetables from the Combi Cooker Pan, leaving the liquid in the Combi Cooker Pan.

Combine cornstarch and water then add to the reserved liquid in the pan. Return the pan to Level 1, With the door open, flip the SmartSwitch to AIRFRY/STOVETOP, select SEAR/SAUTE and set temperature to HI, and with the door open, whisk liquid for 2-3 minutes until thickened.

Serve the cooked short ribs with sauce over mashed potatoes if desired.
