Pulled Jackfruit Sandwiches

Jackfruit is becoming as ubiquitous as tofu in grocery stores! You’ll find it canned in the aisles or packaged (often near that tofu) in the refrigerated section. Pro tips: Avoid jackfruit packed in syrup! You want water-packed or in brine.

Cooking mode

  • 20 ounces canned or packaged jackfruit (in water or brine)
  • 1 tablespoon garlic, peeled, minced
  • 1 teaspoon mustard powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 cup tomato paste
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/2 cup water

TOPPINGS (optional)

  • Hamburger buns
  • Thick red onion slices
  • Shredded cabbage

Utensils

  • Step 1

    Add all ingredients to the pot and stir to combine.

  • Step 2

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 350°F, and set time to 3 minutes. Press START/STOP to begin cooking (PrE will display for approx. 8 minutes as the unit steams, then the timer will start counting down).

  • Step 3

    When cooking is complete, select SEAR/SAUTÉ and set to 4. Bring the jackfruit and sauce to a simmer, about 3 minutes. With a fork, stir and tear the jackfruit apart.

  • Step 4

    Serve on hamburger buns with desired toppings.
