Egg Muffins and Crispy Bacon

Level 1 (Bottom of Pot)
- 6 large eggs
- Cilantro, chopped, as desired
- 1/4 red pepper, diced
Level 2 (Crisper Tray)
- 2 tablespoons Primal Kitchen Cilantro Lime Dressing
- 6 slices of bacon, halved
- Avocado, sliced (for serving)
Utensils
- Medium Bowl
- Whisk
- Silicone muffin molds

Step 1
In a medium bowl, add eggs, cilantro, red pepper and Primal Kitchen Cilantro Lime Dressing. Whisk until combined.

Step 2
Evenly pour mixture into 6 silicone baking cups. Place the cups in the bottom of the unit.

Step 3
Pull out the legs on the Crisper Tray, then place the tray in the elevated position in the pot. Lay the bacon slices in a single layer on top of the tray.

Step 4
Close the lid and flip the SmartSwitch™ to RAPID COOKER. Select SPEEDI MEALS, set temperature to 390°F, and set time for 8 minutes. Press START/STOP to begin cooking (the unit will steam for approx. 10 minutes before crisping).

When cooking is complete, use silicone-tipped tongs to grab the center handle and remove the tray from the unit.

Serve 2 egg muffins and 4 half-slices of bacon with sliced avocado and enjoy!
