Celebrating National Walnut Day is going to be so much sweeter when you dig into this Honey Walnut Cheesecake Ice Cream with a Graham Cracker Crumble. Made with real cream cheese, honey, and walnuts, this treat is sure to be on rotation in your household beyond this special day created to commemorate our favorite nutrient-packed and versatile nut! 

 

TIP: If the ice cream appears to have a powdery consistency after the MIX IN step is complete, allow the ice cream to process through one RE-SPIN cycle before serving to create a creamier consistency.

 

TIP: In Step 2, instead of mixing ingredients by hand, try adding the microwaved cream cheese, heavy cream, sour cream, and vanilla to the Ninja® TWISTi™ blender and blend until smooth.

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 6 tablespoons cream cheese
  • 1 tablespoon sour cream
  • ¼ teaspoon vanilla
  • ¼ cup honey
  • 1 tablespoon granulated sugar
  • 1 ¼ cup half and half
  • 1/3 cup chopped walnuts

Toppings (optional)

  • 4 graham cracker squares, crushed

  • Large Microwave-Safe Bowl
  • Whisk
  • Step 1

    Add the cream cheese to a large, microwave-safe bowl, and microwave for 20 seconds, until softened. Add the sour cream, vanilla, sugar, and honey, and mix until combined.

  • Step 2

    Slowly mix in the half and half until the mixture is smooth and fully combined.

  • Step 3

    Pour base into an empty CREAMi™ Pint. Place storage lid on pint and freeze for 24 hours.

  • Step 4

    Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle in outer bowl lid, and lock the lid assembly onto the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 5

    Select ICE CREAM.

  • Step 6

    With a spoon, create a 1 ½ inch wide hole that reaches the bottom of the pint. During this process, it is okay for your treat to press above the MAX FILL line. Add the walnuts to the hole and process again using the MIX IN program.

  • Step 7

    When processing is complete, remove ice cream from pint and serve immediately, topping with crushed graham crackers if desired.
