Grilled French Toast With Strawberries

For the bread
- 1 cup almond flour
- 1 tablespoon erythritol
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon apple cider vinegar
- 2 large eggs, beaten
- 2 tablespoons melted coconut oil
For the French toast
- 2 large eggs, beaten
- 1/2 cup full-fat coconut milk
- 2 tablespoons erythritol
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 8 large strawberries, diced
- 4 tablespoons sugar-free maple-flavored syrup

Step 1
To make the bread
Insert the Crisper Basket and close the hood. Select AIRCRISP, set the temperature to 350°F, and set the time to10 minutes. Select START/STOP to begin preheating.

In a large bowl, stir together the almond flour, erythritol, baking powder, cinnamon, vanilla, vinegar, eggs, and coconut oil until well combined. Form the dough into4 equal balls.

When the unit beeps to signal it is preheated, lay a sheet of parchment paper in the basket. Place each doughball in the parchment-lined Crisper Basket. Close the hood and cook for 10 minutes.

Remove the basket, take out the bread and parchment paper, and set the bread aside to cool for 5 minutes.

To make the French toast
Meanwhile, insert the Grill Grate and close the hood. Select GRILL, set the temperature to HIGH, and set the time to 5 minutes. Select START/STOP to begin preheating.

In a large bowl, whisk the eggs, coconut milk, erythritol, vanilla, and cinnamon until well combined.

Halve the bread rolls horizontally. Place each half into the egg mixture. Let soak for 5 minutes, then turn the slices and soak for an additional 5 minutes.

When the unit beeps to signal it is preheated, place the soaked bread directly onto the Grill Grate. Close the hood and cook for 2 1/2 minutes. After 2 1/2 minutes, flip the bread, close the hood, and cook for an additional 2 1/2 minutes.

Remove the French toast from the grill and serve with the strawberries and syrup.
