Walnut Baklava Ice Cream

Ingredients

  • 1 teaspoon unsalted butter
  • 1 1/4 cups whole milk, divided
  • 1 1/2 tablespoon corn starch
  • 1/3 cup honey
  • 1/2 cup heavy cream
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup walnut halves or pieces
  • 1/2 teaspoon vanilla bean paste (or seeds from 1 whole vanilla bean)
  • 1 1/2 teaspoon orange blossom water (optional)

Method

  • Step 1

    Place butter into a medium saucepan over medium low heat and cook until butter is melted.

  • Step 2

    Add walnuts to the saucepan and cook until golden, stirring frequently. Then transfer walnuts to a plate to cool. Wipe saucepan clean for later use.

  • Step 3

    Add 1 1/2 tablespoons of milk and corn starch to a small bowl. Whisk to combine, then set aside.

  • Step 4

    Add the remaining milk, honey, heavy cream, and cinnamon to the saucepan. Place saucepan on stove over medium heat, stirring frequently with a whisk or rubber spatula. Cook until the mixture boils, then remove from the heat.

  • Step 5

    Add the corn starch mixture to the sauce pan and whisk until combined and mixture has thickened. Whisk in the walnuts, vanilla, and orange blossom water (if using).

  • Step 6

    Pour base into an empty CREAMi™ Pint. Place storage lid on pint and freeze for 24 hours.

  • Step 7

    Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 8

    Select ICE CREAM.

  • Step 9

    When processing is complete, remove ice cream from pint and serve immediately.
