Vegan Burger Bowl with Herbed Sweet Potatoes & Mustardy Farro

This is the perfect vegan dinner recipe! This Vegan Burger Bowl with Herbed Sweet Potatoes & Mustardy Farro is sure to please your family for dinner.

TIP: If you’re making this for two, skip the 2 extra veggie burgers on level 3 and instead, place 2 veggie burgers and thick cut sweet potatoes on the rack.  If using dijon mustard, double check to make sure it’s certified vegan. You can also substitute any other vegan mustard of your choice and skip the mayonnaise for something less creamy! For meal prep, store each part of the bowl in separate containers, then heat up right before plating.

Step-by-step instruction without your screen going to sleep

LEVEL 1 (BOTTOM OF POT)

  • 1 cup farro
  • 2 cups water
  • 1/2 teaspoon kosher salt
  • 2 tablespoons vegan Dijon mustard
  • 2 teaspoons vegan mayonnaise
  • Ground black pepper, as desired
  • Fresh dill, chopped, as desired

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 1 large sweet potato, sliced into thick cut fries
  • 2 tablespoons olive oil
  • 2 tablespoons Herbs de Provence
  • Kosher salt, as desired
  • Ground black pepper, as desired

LEVEL 3 (TOP LAYER OF RACK)

  • 2 frozen plant-based burgers
  • 1 tablespoon olive oil

SIDE SALAD (optional)

  • Salad greens of choice
  • 2 avocados, sliced

TOPPINGS (optional)

  • 1 small shallot, thinly sliced
  • 1 tomato, thinly sliced
  • vegan cheese of choice

Utensils

  • Aluminum Foil

  • Step 1

    Place the farro, water, and salt in the pot and stir to combine. 

  • Step 2

    Place all Level 2 ingredients in a large bowl and toss until evenly combined.   

  • Step 3

    Lightly brush both sides of the plant-based burgers with oil.  

  • Step 4

    Place the bottom layer of the Deluxe Reversible Rack in the lower position, cover with aluminum foil, then place the rack in the potPlace the sweet potatoes on the rack. 

  • Step 5

    Slide the Deluxe Layer through the lower layer’s handles. Place the plant-based burgers on the Deluxe Layer.  

  • Step 6

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 450°F, and set time to 12 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams then the timer will start counting down). 

  • Step 7

    With 6 minutes remaining, carefully open the lid and flip the burgers. Close the lid to continue cooking.  

  • Step 8

    When the cooking is complete, carefully remove the entire rack layer. Add the Dijon mustard, vegan mayonnaise, pepper, and dill to the farro and stir until evenly combined. 

  • Step 9

    Top the plant-based burgers with sliced shallot, tomato, and vegan cheese. Serve with farro, sweet potatoes, and side salad if desired.
