Cauliflower Fried Rice

This cauliflower fried rice is a healthier, lower calorie take on the classic side dish.

TIP: Add chicken, shrimp, or tofu to make this a heartier meal, or omit the egg and butter to make it vegan.

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 1 head cauliflower, cut into florets
  • 2 tablespoons unsalted butter 
  • 1 garlic clove, minced
  • 1/4 teaspoon minced fresh ginger
  • 1/4 teaspoon red pepper flakes 
  • 1 1/2 tablespoon sesame oil 
  • 1 egg 
  • 2 tablespoons soy sauce 
  • salt
  • fresh ground black pepper
  • 2 scallions, sliced, for garnish

Utensils

  • Step 1

    Select SEAR/SAUTE. while the unit is heating, place the cauliflower florets in a food processor and post them to create a rice like texture.  

  • Step 2

    Add the butter to the pot. Once melted, add the garlic, ginger, and red pepper flakes. Add the cauliflower rice to the pot and stir to combine. Cook, stirring occasionally, for 3 to 4 minutes. 

  • Step 3

    Push the cauliflower rice to the side and add the sesame oil. Once hot, crack the egg into the pot and scramble it, about 2 minutes. Once the eggs scrambled, stir to combine it with the cauliflower rice. Stir in the soy sauce. season everything with salt and pepper.  

  • Step 4

    Using a spatula, spread the cauliflower rice into an even layer across the surface of the pot.  

  • Step 5

    Close the crisping lid. Select AIR CRISP and set time to 10 minutes. Select start/stop to begin, stirring the cauliflower rice after 5 minutes and spread it back into an even layer.  

  • Step 6

    When cooking is complete, transfer the cauliflower rice two bowls and garnish with scallions. Serve.
