  • 1 no-beef bouillon cube or 1 teaspoon powder or paste
  • 2 cups boiling water
  • 4 tablespoons soy sauce, divided
  • 1 teaspoon garlic powder
  • 2 cups dried soy chunks or curls
  • 2/3 cup no-beef or vegetable broth
  • 1 1/2 teaspoons maple syrup
  • 4 cloves garlic, peeled, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sesame oil
  • 1/8 teaspoon ground black pepper
  • Pinch red pepper flakes, optional
  • 5 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • Cooked brown or white rice, as desired
  • 3 green onions, sliced on a bias, for topping
  • 1 tablespoon sesame seeds, for topping

  • Step 1

    Install SearPlate in the bottom level of the unit, then close the door. Select AIR ROAST, set temperature to 400°F, and set time to 10 minutes. Press the setting dial to begin preheating.

  • Step 2

    In a large bowl, dissolve one bouillon cube in the boiling water. Add 2 tablespoons soy sauce, garlic powder, and soy chunks to the bowl and let sit for 10 minutes.

  • Step 3

    To make the sauce, add no-beef broth, remaining soy sauce, maple syrup, garlic, ground ginger, sesame oil, pepper, and red pepper flakes to a large bowl and whisk until combined.

  • Step 4

    Add the broccoli to the sauce and toss to evenly coat. Remove the soy chunks from the large bowl and squeeze to remove any excess liquid.

  • Step 5

    When unit has preheated, open door and use oven mitts to remove SearPlate and place it on top of oven. Using a slotted spoon, transfer broccoli to the SearPlate and reserve the marinade. Then add the soy curls to the SearPlate. Drizzle with olive oil and toss to evenly coat.

  • Step 6

    Reinstall the SearPlate in the bottom level of the unit. Close door to begin cooking.

  • Step 7

    While the vegetables cook, prepare the marinade. In a small bowl, whisk together the corn starch and water until evenly combined. Transfer the reserved marinade to a small saucepan over medium-high heat. Bring to a boil, then whisk in the prepared corn starch slurry until dissolved. Reduce heat to medium-low and season with salt and pepper as desired. Cook for 10 minutes.

    When cooking is complete, carefully remove SearPlate from oven with oven mitts. Drizzle the soy curls and broccoli with the prepared marinade and toss to evenly coat. Serve over a bed of rice and top with green onions and sesame seeds.
