Vegan Stuffed Mushrooms

TIP: These stuffed mushrooms are easily made gluten-free by using gluten-free bread crumbs. To make ahead, prepare the mushrooms and keep covered in the refrigerator until just before you’re ready to serve, then bake them fresh. The prepared and unbaked mushrooms will keep for up to one day.

  • 1 pound whole cremini mushrooms, stems removed and chopped
  • 1 tablespoon olive oil
  • 1 shallot, peeled, diced
  • 2 cloves garlic, peeled, minced
  • 1/4 cup bread crumbs, plus more for garnish
  • 3/4 cup (6 ounces) vegan cream cheese, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • Vegan Parmesan cheese, for garnish, as desired

  • Step 1

    Install SearPlate in the bottom level of the unit, then close the door. Select RAPID BAKE, set temperature to 400°F, and set time to 20 minutes. Press the setting dial to begin preheating.

  • Step 2

    Place a large skillet over medium heat and add oil. When oil is hot, add the chopped mushroom stems and shallots. Cook until the shallots are translucent, about 5 minutes.

  • Step 3

    Add the garlic and cook until fragrant, about 1 minute. Add the bread crumbs and cook until slightly toasted, about 3 minutes. Remove the skillet from heat and let cool for 3 minutes.

  • Step 4

    Transfer the mushroom stem mixture to a large bowl. Add the vegan cream cheese, parsley, thyme, salt, and pepper. Mix until fully combined.

  • Step 5

    When unit has preheated, open door, carefully remove the SearPlate with oven mitts and place on top of oven. Place the mushroom caps on the SearPlate and evenly stuff with the prepared mixture. Sprinkle with bread crumbs and vegan Parmesan, as desired.

  • Step 6

    Reinstall the SearPlate in the bottom level of the unit and close the door to begin cooking.

  • Step 7

    When cooking is complete, remove SearPlate and set aside to cool before serving.
