TIP: Invert crisper tray for easier removal of shortcakes. Parchment paper may be used on crisper tray for easier clean-up but will impact browning on the bottom of shortcakes.

Cooking mode

  • 1 cup water, for steaming
  • 2 cups all-purpose flour
  • 4 tablespoons granulated sugar, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 stick (1/2 cup) unsalted butter, cold
  • 1 cup heavy cream
  • 1 1/2 teaspoons white vinegar
  • 1/2 teaspoon vanilla extract
  • 1 pint (16 ounces) strawberries, hulled, sliced ¼-inch thick
  • 1 container (8 ounces) whipped topping
  • Powdered sugar, as desired

Utensils

  • Step 1

    Pour 1 cup water into the Combi Cooker Pan for steaming. Place the Crisper Tray on top, then set aside.

  • Step 2

    In a large bowl combine the flour, 2 tablespoons granulated sugar, baking powder, baking soda, and salt. Whisk to combine. Using a box grater, grate the stick of butter with largest grate size into the dry ingredients and toss to combine with a rubber spatula.

  • Step 3

    In a large measuring cup, add all liquid ingredients and stir. Then add liquid ingredients to dry ingredients and mix/knead with hands until dough just comes together.

  • Step 4

    Remove the dough from the bowl and place onto a clean surface. With hands, pat into a 4-inch by 7-inch rectangle that will be about 1 1/4-inches tall.

  • Step 5

    With a knife, cut dough into 6 equal pieces and place onto the crisper tray, evenly spacing them apart. Slide the pan into the Level 1.

  • Step 6

    Close the door and flip the SmartSwitch to COMBI COOKER. Select COMBI BAKE, set temperature to 375°F and set the time to 5 minutes. Press START/STOP and begin cooking (the unit will steam for 20 minutes).

  • Step 7

    While shortcakes are baking, toss sliced strawberries with remaining granulated sugar and allow to sit at room temperature.

  • Step 8

    When cooking is complete allow shortcakes to cool for 5-10 minutes before removing from the crisper tray.

    Once ready to assemble, slice shortcakes in half horizontally. Place strawberries and whipped topping on one half, and then top with the other half of the shortcake. Dust with powdered sugar and serve.
