- 1 tablespoon olive oil
- 1 medium yellow onion, peeled, diced
- 2 cloves garlic, peeled, minced
- 4 ounces frozen artichokes, thawed
- 4 ounces frozen spinach, thawed, drained
- 1/4 teaspoon red pepper flakes
- 1 can white beans, drained, rinsed
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 cup shredded mozzarella cheese, divided

Step 1
Install rack in bottom position and close the door. Select AIR ROAST, set temperature to 375°F, and set time to 7 minutes. Press the setting dial to begin preheating. While unit is preheating, prepare dip ingredients.

Place a large pan over medium heat. Add the olive oil and onion and sweat for 4 to 5 minutes or until softened. Add the garlic and cook for 30 more seconds.

Turn the heat to medium-high. Add the spinach, artichokes, and red pepper flakes. Toss to combine and cook for 3 to 4 minutes or until everything is heated through.

Transfer the spinach and artichoke mixture into the bowl of a food processor. Add the white beans, garlic powder, onion powder, and 1/2 cup of shredded mozzarella cheese. Pulse until the mixture is mostly smooth.

Transfer the dip into an oven safe dish that will fit into the unit. Top with the remaining mozzarella cheese.

When unit is preheated, open the door and place the dish onto the center of the rack. When cooking is complete, carefully remove pan from the oven.

Serve with your favorite dippers.
