Smoked Roasted Carrots

These smoked roasted carrots are a quick, easy, 4-ingredient recipe that is a perfect side dish! Serve these with your favorite protein and a salad or some roasted potatoes.

  • 2 pounds carrots, peeled, cut in 1-inch pieces
  • 1 tablespoon canola oil
  • kosher salt, as desired
  • ground black pepper, as desired

  • Step 1

    To install the grill grate, position it flat on top of the heating element and gently press down until it sits into place. Place the Crisper basket on top of the grill grate, then close the hood.

  • Step 2

    While holding the smoke box lid open, use the pellet scoop to pour pellets into the smoke box until filled to the top. Then close the smoke box lid.

  • Step 3

    Turn the dial to ROAST. Press WOODFIRE FLAVOR, set temperature to 390°F, set the time to 20 minutes. Select START/STOP to begin preheating (preheating will be approx. 8-10 minutes).

  • Step 4

    In a large bowl, toss carrots with oil, salt, and pepper. When the unit indicates it has preheated and ADD FOOD is displayed, open the hood and add the carrots to the basket. Close the hood to being cooking.

  • Step 5

    When 10 minutes remain, open the hood, and toss the carrots. Close hood and continue cooking.

  • Step 6

    When cooking is complete, remove carrots from basket and serve.
