Cooking mode

  • 1 cup + 2 teaspoons milk, warm (110°F)
  • 3 tablespoons unsalted butter, melted, cooled
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 3 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 3 cups bread flour + more for rolling out the dough
  • 1/4 cup water for steaming
  • Nonstick cooking spray
  • 1 large egg beaten with 1 tablespoon milk for egg wash
  • 1/4 cup sesame seeds

  • Step 1

    To make the dough, add 1 cup + 2 teaspoons of milk, butter, yeast, and sugar to the bowl of a stand mixer with the dough hook. Allow the mixture to sit and let the yeast activate until it is bubbling, about 5 to 10 minutes.

  • Step 2

    Add the salt and bread flour. Knead the dough on medium speed until smooth and stretchable, about 10 minutes. Test the dough by pulling a piece of it using both hands. It should stretch into a very thin, translucent sheet.

  • Step 3

    Add 1/4 cup water to the pot. Place an 8-inch circle of parchment paper in the bottom of the Cook & Crisp Basket and spray with nonstick cooking spray. Form the dough into a ball and place in the basket. Place the basket in the pot.

  • Step 4

    Close the lid and move slider to AIR FRY/STOVETOP. Select PROOF, set temperature to 95°F, and set time to 30 minutes. Press START/STOP to begin the rise.

  • Step 5

    When the rise is complete, remove the basket from the pot. Transfer the dough to a lightly floured surface and deflate by gently pressing on it.

  • Step 6

    Divide the dough into 14 balls.

  • Step 7

    Return the basket to the pot. Place an 8-inch circle of parchment paper in the bottom of the basket and spray with nonstick cooking spray. Place 7 rolls seam side down along the edges of the basket. They should not be touching.

  • Step 8

    Using a pastry brush, brush the dough balls with half the prepared egg wash, then sprinkle with sesame seeds. Reserve the remaining egg wash and sesame seeds for the second batch of rolls.

  • Step 9

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 335°F, and set time to 10 minutes. Press START/STOP to begin cooking (PrE will display for approx. 5 minutes as the unit steams, then the timer will start counting down).

  • Step 10

    When cooking is complete, the rolls should be lightly browned. Repeat steps 7–9 with the remaining dough.
