Lavender Cookies ‘n Cream Ice Cream

TIP: When paired with cream and sugar, lavender is essentially nature’s cotton candy. It’s truly something special that you must taste to believe. If you are new to the lavender bandwagon and want to taste before committing to a lavender-heavy ice cream, infuse the milk with 1/2 tablespoon lavender instead of 1 tablespoon. Taste the heavy cream after infusing lavender to ensure that you enjoy the flavor. If you want to add more, you can always add more!

  • 3/4 cup heavy cream
  • 1 tablespoon dried culinary lavender
  • 1/8 teaspoon kosher salt
  • 3/4 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 4 drops purple food coloring
  • 1/3 cup crushed chocolate wafer cookies


  • Whisk
  • Fine-Mesh Strainer
  • Large Bowl
  • Medium Saucepan
  • Step 1

    In a medium saucepan, add heavy cream, lavender, and salt. Whisk to combine.

  • Step 2

    Place saucepan on stove over low heat and steep 10 minutes, stirring every 2 minutes to prevent bubbling.

  • Step 3

    Over a large bowl, strain lavender from heavy cream with a fine-mesh strainer. Discard lavender.

  • Step 4

    In the large bowl, add milk, sweetened condensed milk, and purple food coloring. Whisk until smooth.

  • Step 5

    Pour base into an empty CREAMi™ Pint. Place pint into an ice bath. Once cooled, place storage lid on pint and freeze for 24 hours.

  • Step 6

    Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle in outer bowl lid, and lock the lid assembly onto the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 7

    Select ICE CREAM.

  • Step 8

    With a spoon, create a 1 1/2-inch wide hole that reaches the bottom of the pint. During this process, it is okay for your treat to exceed the MAX-FILL line. Add crushed wafer cookies to the hole and process again using the MIX-IN program.

  • Step 9

    When processing is complete, remove ice cream from pint and serve immediately, topped with extra crumbled wafers if desired.
