Meatballs

  • 1/2-pound ground beef
  • 1/2-pound ground pork
  • 1 large egg
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1/2 cup breadcrumbs
  • 1 tablespoon garlic powder
  • 1/4 cup chopped parsley
  • Kosher salt, as desired
  • Ground black pepper as desired

Soup

  • 2 tablespoons olive oil
  • 1 medium white onion, peeled and diced
  • 3 carrots, peeled, diced in ½-inch
  • 2 celery sticks, diced in ½-inch pieces
  • 3 garlic cloves, peeled, minced
  • 1 tablespoon Italian seasoning
  • 7 cups chicken broth
  • 1 cup ditalini, or other small pasta such as orzo or stars
  • 4 cups escarole or spinach, torn into small pieces

  • Step 1

    In a medium bowl, add all MEATBALL ingredients and mix until combined. Divide into 16 equal portions and roll into balls, set aside.

  • Step 2

    Place Dutch Oven into Level 1. With the door open, flip the Smart Switch to AIRFRY/STOVETOP, select SEAR/SAUTE, and set temperature to 4. Allow the Dutch oven to preheat for 3 minutes.

  • Step 3

    After 3 minutes, add 2 tablespoons olive oil to the Dutch Oven, and then add the meatballs. Cook until golden brown all over, about 8-10 minutes. Remove Dutch Oven from unit, then remove meatballs and set aside. Discard all but 1 tablespoon of oil from Dutch Oven.

  • Step 4

    Add the onions, celery, and carrots to the Dutch Oven then place into Level 1. With the door open, cook for 10 minutes, stirring occasionally. Then add the garlic and Italian seasoning, cook for 2 minutes.

  • Step 5

    Pull the Dutch Oven out, add chicken broth and stir. Carefully add the Dutch Oven back into Level 1 and increase the SEAR/SAUTE temperature to 5 and allow to simmer, about 15 minutes.

  • Step 6

    Once simmering, add the ditalini and the meatballs then reduce temperature to 3 and let simmer for 15 minutes.

    Next, add the escarole or spinach and cook until wilted, about 5 minutes.

    When cooking is complete, season as desired and serve garnished with parmesan cheese and olive oil.
