Italian Stuffed Mushrooms
These mushrooms stuffed with chopped green onion, bell pepper, bread crumbs, and Italian seasoning are a delicious and easy-to-make appetizer.
TIP: You can stuff, cover, and store the mushrooms a full day ahead of cooking so prep time is a breeze.

- 1 tablespoon butter
- 12 medium whole fresh mushrooms, wiped clean
- 1 scallion, chopped
- 1/3 cup red bell pepper, chopped
- 1/3 cup breadcrumbs
- 1 teaspoon Italian seasoning
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Nonstick cooking spray
- Grated Parmesan cheese (Optional)

Step 1
Place the butter in the pot. Select SEAR/SAUTE and allow butter to melt, about 1 to 2 minutes.

Twist mushroom stems to remove from caps. Set mushroom caps aside. Finely chop stems and reserve ⅓ cup worth.

Place mushroom stems, scallion, and bell pepper in the pot and stir to combine. Sauté for 3 minutes, then transfer mixture to bowl, stir in breadcrumbs, Italian seasoning, salt, and pepper. Fill mushroom caps with mixture and set aside.

Pour ½ cup water into the pot. Push in the legs on the Crisper Tray, then place the tray in the bottom position and spray with cooking spray. Place stuffed mushrooms on Crisper Tray.

Close the lid and flip the SmartSwitch to Rapid Cooker. Select STEAM & CRISP, set temperature to 350°F, and set the time to 4 minutes. Press START/STOP to begin cooking (the unit will steam for approx. 4 minutes before crisping).

When cooking is complete, remove mushrooms, sprinkle with grated Parmesan cheese if desired, and serve.
