Green Goddess Bowl

Made with a variety of green produce and flavorful fresh herbs, this green goddess bowl make you feel like you’re glowing from the inside out. Normally this bowl recipe would require a pot, colander, and two baking sheets, but not with the Ninja Speedi!

Tip: If gluten-free, swap soy sauce for tamari.

LEVEL 1 (BOTTOM OF POT)

  • 1 box (8 ounces) legume based pasta
  • 2 cups broccoli, cut in 1-inch florets
  • 3 cups vegetable broth

LEVEL 2 (CRISPER TRAY)

  • 1 tablespoon low sodium soy sauce or tamari
  • 2 tablespoons olive oil
  • 1 package (14 ounces) extra firm tofu, drained, patted dry, cut in 1/2 inch cubes
  • 1 tablespoon corn starch

GREEN GODDESS SAUCE

  • 1/4 cup olive oil
  • 3-4 tablespoons lemon juice
  • 1 cup baby spinach, torn
  • 1 cup basil
  • 1/4 cup raw cashews
  • 3 tablespoons chives
  • 2-3 tablespoons nutritional yeast
  • Kosher salt, to taste
  • Water, as needed

OPTIONAL TOPPINGS

  • Baby spinach
  • Diced avocado

Utensils

  • Step 1

    Place all level 1 ingredients in the pot and stir to combine.

  • Step 2

    Pull out the legs on the Crisper Tray, then place the tray in the elevated position in the pot.

  • Step 3

    In a medium bowl, add the soy sauce and olive oil and stir to combine. Then add the tofu and gently toss to coat. Add the cornstarch to the tofu and gently toss to coat again.

    Place the tofu on the Crisper Tray.

    Close the lid and flip the SmartSwitch™ to RAPID COOKER.

    Select SPEEDI MEALS, set temperature to 350°F, and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for approx. 10 minutes before crisping).

  • Step 7

    Meanwhile, prepare the green goddess sauce by combining all ingredients in a blender. Blend until smooth, adding water as necessary to thin. Set aside.

  • Step 8

    When cooking is complete, transfer the tofu to a plate. Then use silicone-tipped tongs to grab the center handle and remove the tray from the unit. Stir the pasta and serve with tofu, green goddess sauce, and toppings as desired.
