Step-by-step instruction without your screen going to sleep

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup unsalted butter, slightly softened
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 3 cups old fashioned oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Utensils

  • Large Bowl
  • Stand or Hand Mixer
  • Step 1

In a large bowl, sift together both flours, baking powder, baking soda, cinnamon, and nutmeg. Then set aside.

  • Step 2

Using a hand mixer on medium speed, cream together the butter and brown sugar in a separate large bowl until light and fluffy.

  • Step 3

Reduce the speed to low, then add in the eggs one at a time, making sure the first one is incorporated before adding the next.

  • Step 4

With the mixer still on low, slowly add the flour mixture and mix until well-combined. Add the oats and continue to mix until combined.

  • Step 5

Turn off the mixer and use a large spatula to fold in the cranberries and white chocolate chips by until evenly distributed.

  • Step 6

Install SearPlate in the bottom level of the unit, then close the door. Select RAPID BAKE, set temperature to 350°F, and set the time to 6 to 8 minutes, depending on desired doneness. Press the setting dial to begin preheating. (The timer will start counting down as soon as the unit has preheated. Simply turn the dial to add time.)

  • Step 7

Portion the dough into 24 balls, about 1 tablespoon each. When the dough is divided, press the balls down slightly to flatten. Use parchment for easy clean up or loading of cookies.

  • Step 8

When unit has preheated, carefully remove the SearPlate with oven mitts and place on top of the oven. Place 12 cookies on the tray in four rows of three, spaced about 1 inch apart. Reinstall the SearPlate in the bottom level of the unit and close the door to begin cooking.

  • Step 9

When baking is complete, remove the SearPlate and set aside to cool for 7 to 10 minutes before serving. Repeat with remaining cookies.
