Chicken Sausage, Goat Cheese, Basil, and Cranberry Stuffed Mushrooms

Step-by-step instruction without your screen going to sleep
- 1 tablespoon olive oil
- 1/2 cup yellow onion, diced
- 1 pound chicken sausage, casing removed, crumbled
- 6 ounces 6 ounces goat cheese
- 3 tablespoons basil, cut in thin ribbons
- 1/3 cup 1/3 cup dried cranberries, chopped
- Kosher salt, as desired
- Ground black pepper, as desired
- 16 baby portobello mushrooms, rinsed, stems removed

- Ninja® Foodi® Dual Heat Air Fry Oven
- Large Saute Pan

Step 1
Place a large pan over medium-high heat. Add the oil and onion and sauté until lightly browned and softened, about 4 to 5 minutes.

Add the chicken sausage to the pan and cook until browned, about 5 to 6 minutes. Remove the pan from heat and set aside to cool for 5 to 10 minutes.

Once the sausage mixture is cooled, transfer to a large bowl along with the goat cheese, basil, cranberries, salt, and pepper and mix until fully combined.

Stuff each mushroom with a heaping tablespoon of the sausage mixture.

Remove Air Fry Basket from oven. Select AIR FRY, set temperature to 325°F, and set time to 12 minutes. Press the setting dial to begin preheating.

While unit is preheating, arrange mushrooms in the Air Fry Basket, making sure they are not crowding each other.

Step 7
When unit has preheated, open door, install SearPlate in the bottom level of the unit and the basket in the top level of the unit. Close door to begin cooking.

When cooking is complete, carefully remove the basket from the oven and serve warm.
