Buffalo Chicken Pizza

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 3-4 pounds roaster chicken, giblets removed, patted dry
  • 2 tablespoons butter, room temperature
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 8 ounces pre-made raw pizza dough, room temperature
  • ½ cup buffalo sauce, divided
  • 1/3 cup mozzarella, shredded
  • ¼ cup bleu cheese
  • Green onions, optional
  • Step 1

    Install the Accessory Frame in the bottom level of the unit.

  • Step 2

    Turn dial to select BAKE, set temperature to 350F and set time to 1 hour. Select START/STOP to begin preheating (preheating will take approx. 10 minutes).

  • Step 3

    Place the chicken on a cutting board and spread the butter all over then rub with salt and pepper. Place the Roast Rack in the Pro-Heat Pan, then place chicken on the rack.

  • Step 4

    When unit is preheated and ADD FOOD and PRS STRT is displayed, open door and place the pan in the unit. Close door, select START/ STOP to begin cooking. Cooking is complete when the internal temperature reads 165⁰F on an instant-read thermometer.

  • Step 5

    When cooking is complete, open door, remove pan with chicken and baste with leftover juices or water. Cover with aluminum foil and let rest.

  • Step 6

    Insert the Pizza stone on top of the Accessor Frame. Turn left-hand dial to select PIZZA, then use the right-hand dial to select NEAPOLITAN, and set time to 3 minutes. Select START/STOP to begin preheating (preheating will take approx. 20 minutes).

  • Step 7

    On a lightly floured work surface, stretch and toss dough by hand into a 10-inch circle about 1/8-inch thick.

  • Step 8

    Uncover the chicken and use two forks to shred the meat off the bone. Place in a bowl and toss with ¼ cup of buffalo sauce.

  • Step 9

    Evenly cover dough with the remaining buffalo sauce, leaving ½-inch edge for the crust. Evenly top with the mozzarella cheese, ½ cup shredded buffalo chicken, and the bleu cheese. Do not overtop the pizza.

  • Step 10

    When unit is preheated and ADD FOOD and PRS STRT is displayed, open door, slide a floured Pizza Peel under the pizza and transfer to the hot stone. Close door, select START/STOP, and cook for 3 minutes. If more time is necessary or a darker pizza is desired, increase the time using the right-hand dial.

  • Step 11

    When cooking is complete, open door and remove pizza with peel. Top with the green onions, if desired. Let rest for 5 minutes before cutting and serving.
