Cooking mode

Step-by-step instruction without your screen going to sleep

  • 1/4 pound lean ground beef
  • 1 large egg, beaten
  • 1/2 cup tortilla chips, crushed
  • 3 tablespoons chili powder blend, divided
  • 2 teaspoons Kosher salt, divided
  • 1 1/2 teaspoons ground black pepper, divided
  • 4–6 corn tortillas (6 inches)
  • 2 ears of corn, shucked and halved
  • 1 tablespoon olive oil
  • 2 limes, one zested, both cut in wedges for serving
  • 1/2 cup 1/2 cup water, for steaming
  • 5 ounces 5 ounces frozen sweet potato fries
  • Nonstick cooking spray

Utensils

  • Deluxe Reversible Rack (Both Layers)
  • Step 1

    In a bowl, combine ground beef, egg, tortilla chips, 2 tablespoons chili powder blend, 1 teaspoon salt, and 1 teaspoon black pepper.

  • Step 2

    Warm tortillas in a damp paper towel in the microwave for about 30 seconds. Place approximately 1/4 cup of the mixture onto each tortilla. Roll each tortilla up and secure with a toothpick. Depending on how much mixture you place on each tortilla, you can make 4 to 6 taquitos.

  • Step 3

    Rub the ears of corn with olive oil. Sprinkle the corn with the lime zest and the remainder of the chili powder blend, salt, and pepper. Set aside.

  • Step 4

    Add 1/2 cup water to the bottom of the pot. Place the corn on the Deluxe Reversible Rack. Place the Deluxe Reversible Rack in the lower position, then place the rack in the pot over the water.

  • Step 5

    Spray Deluxe Layer with nonstick cooking spray. Slide Deluxe Layer through the lower layer’s handles. In a single layer, place the taquitos and sweet potato fries on the Deluxe Layer.

  • Step 6

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 375°F, and set time to 10 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams, then the timer will start counting down).

  • Step 7

    When cooking is complete, carefully remove rack from the pot and use silicone tongs to remove the taquitos and sweet potato fries.

  • Step 8

    Serve the taquitos with the sweet potato fries and corn, along with lime wedges.
