BBQ Chicken Burgers with Loaded Hasselback Potatoes

Level 1 (Combi Cooker Pan)

  • 2 cups water
  • 2 large russet potatoes, cut in half
  • 1 teaspoon canola oil, divided
  • Kosher salt, as desired
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream, divided
  • 1/2 cup bacon bits, divided

Level 2 (Bake Tray)

  • 1 pound ground chicken
  • 1/3 cup shredded cheese, like Monterrey jack or cheddar
  • 1/2 cup BBQ sauce, divided
  • 1 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 2 tablespoons mayonnaise
  • 2 tablespoons yellow mustard
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrot
  • 4 slices deli cheese, like cheddar or American
  • 4 hamburger buns

  • Step 1

    Pour water in Combi Cooker Pan, place Crispier Tray on top of water in Combi Cooker Pan and set aside.

  • Step 2

    Make 1/2-inch-deep slices across the cut-side of each potato half. Rub 1/4 teaspoon of canola oil onto the cut-side of each potato half, then season the top of each potato as desired with kosher salt.

  • Step 3

    Place potatoes, cut side up, on the Crisper tray and slide the pan into Level 1.

  • Step 4

    Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI CRISP, set temperature to 380°F and set time to 30 minutes. Press START/STOP to begin cooking (the unit will steam for 5 minutes).

  • Step 5

    In a bowl, combine ground chicken, shredded cheese, 1/4 cup of BBQ sauce, onion powder, mustard powder, kosher salt, and ground black pepper. Divide mixture into 4 portions, and form into patties.

  • Step 6

    In a large bowl, combine mayonnaise and mustard, then add shredded lettuce and carrot and toss to combine.

  • Step 7

    When timer has 13 minutes remaining, place burger patties on Bake Tray, open door and slide the tray into Level 2. Close door to continue cooking.

  • Step 8

    When timer has 1 minute remaining, open door and remove Bake Tray. Place cheese slices on burgers, then slide tray back into Level 2. Remove Combi Cooker Pan and place 1/4 cup of shredded cheese over the top of each potato half. Slide the pan back into Level 1. Close door to continue cooking.

  • Step 9

    When cooking is complete, remove tray and pan. Spread one tablespoon of remaining BBQ sauce on the bottom of each hamburger bun. Place burgers on hamburger bun bottom, then top each burger with lettuce mixture, then hamburger bun top.
