Step 1
In a large bowl, mix to combine the yeast, sugar, and water. Allow mixture to sit for 5 minutes, until foamy.
Step 2
Add flour to the bowl. Using a rubber spatula, mix until dough starts to come together. Add salt and continue to mix until ingredients are combined, and no dry flour remains.
Step 3
Cover bowl with a kitchen towel and allow to rise for 1 hour, until dough has doubled in size.

Once dough has risen, turn out onto a floured work surface. Do not press down or flatten dough. Shape dough into a round loaf by gently folding in the corners and edges into the center, until the dough begins to feel tight and resists folds.
Step 5
Flour a proofing basket or medium bowl, then place dough seam-side down. Cover with kitchen towel and allow to rise for 30 minutes.
Step 6
While bread is rising, place PossiblePot with lid on in the oven. Preheat oven to 460°F.
Step 7
After 30 minutes, carefully remove PossiblePot from oven and remove lid. Gently transfer dough seam side up to parchment paper. Carefully place parchment and dough in pot, then cover with the lid.
Step 8
Transfer PossiblePot to oven and bake for 30 minutes. After 30 minutes, remove the lid and continue to cook for 10 to 15 minutes, or until the bread is golden brown.
Step 9
When cooking is complete, carefully remove bread from pot. Transfer to wire rack and allow to cool for 30 minutes before slicing.
