- 1 can (15 ounces) black beans, drained, rinsed, mashed
- 3 large eggs
- 3 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 2/3 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/2 cup semi-sweet chocolate chips

Step 1
Preheat the oven to 350°F. Line a 9-inch square baking pan with parchment paper and set aside.

Assemble the hand mixer attachment on the power base, then install the beaters.

In a large bowl, add mashed black beans, eggs, oil, and vanilla. Press power then the up arrow to mix on speed 2 until well combined.

In a separate bowl, combine cocoa powder, sugar, baking powder, and salt.

Add dry ingredients to bean mixture. Press power to begin mixing on speed 1 and then gradually increase to speed 4. Mix until just combined, about 1 minute.

Fold in chocolate chips. Then transfer batter to the prepared baking pan. Place pan in the oven and bake for 30 to 35 minutes or until you can poke a toothpick into the center of the pan and it comes out clean.

When baking is complete, remove pan from the oven and let cool before cutting.
