Marinated Pork Tenderloins with Grilled Peach Mustard Sauce

- 1/2 cup Dijon mustard, divided
- 1 tablespoon dried herbs de Provence
- 1 teaspoon honey
- 2 tablespoons canola oil, divided
- Kosher salt, as desired
- Ground black pepper, as desired
- 2 pork tenderloins
- 2 peaches, pitted, quartered
- 1 shallot, peeled, quartered
- 1 tablespoon ketchup
- 1 tablespoon brown sugar
- 1 tablespoon balsamic vinegar

Step 1
In a small bowl prepare the marinade by combining 1/4 cup Dijon mustard, herbs de Provence, honey, 1 tablespoon canola oil, salt, and pepper. Rub the pork tenderloins with marinade and marinate for 30 minutes to 8 hours.

Step 2
In a separate small bowl, combine peaches, shallot, remaining canola oil, salt, and pepper and toss until combined.

To install the grill grate, position it into the front of the base so it hooks in, then press down on the back until it clicks into place. Add the grease catch on cover and close the hood. Select GRILL TOP, set temperature to MAX, and set time to 8 minutes. Press the dial to begin preheating (preheating will take approximately 5 minutes).

When unit beeps to signal it has preheated, open the hood and place the peaches and shallots on the grill. Leave hood open while cooking.

After 4 minutes, flip peaches and shallots and continue cooking.

When cooking is complete, remove peaches and shallots from grill. Select GRILL, set temperature to MEDIUM, and set time to 18 minutes. Close hood and press the dial to begin preheating.

While unit is preheating, transfer the peaches, shallots, remaining Dijon mustard, ketchup, brown sugar, and balsamic vinegar in a blender and puree until smooth. Set aside.

When unit beeps to signify it has preheated, open the hood and place the pork tenderloins on the grill. Close hood to begin cooking.

After 9 minutes, open hood and flip pork tenderloins. Close hood and continue cooking.

When cooking is complete, open hood and remove pork tenderloins from grill. Allow to rest for at least 5 minutes before cutting. Serve with prepared peach mustard sauce.
