DOUGH INGREDIENTS

  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 3 tablespoons yellow cornmeal
  • 2 teaspoons kosher salt
  • 1 packet instant yeast (2 3/4 teaspoons)
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 1/4 cups lukewarm water

PIZZA TOPPING INGREDIENTS

  • 2 ounces shredded mozzarella cheese (divided)
  • 1 cup drained plum tomatoes, lightly crushed
  • 2 cloves garlic, crushed
  • 1 teaspoon sugar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper (optional)
  • 6 ounces sliced low-moisture mozzarella cheese
  • 4 ounces sweet or spicy Italian sausage, raw
  • 1/4 cup Parmesan cheese

Utensils

  • Deluxe Reversible Rack (bottom layer only)
  • Ninja Cook & Crisp Basket
  • Medium Bowl

  • Step 1

    In the bowl of a stand mixer, combine all ingredients except about 1/2 cup all-purpose flour.

  • Step 2

    Mix on medium speed using the dough hook. When the mixture starts to come together, carefully add as much of the remaining flour as needed for the dough to come together and continue to mix until very smooth, about ten minutes.

  • Step 3

    Add 1/4 cup water to the pot.

  • Step 4

    Place an 8-inch circle of parchment paper in the bottom of the Cook & Crisp Basket.

  • Step 5

    Divide the dough in 2 portions and save 1 in a sealable plastic bag in the refrigerator or freezer for another use.

  • Step 6

    Place the other half in the Cook & Crisp Basket. Place the basket in the pot. Close the lid and move slider to AIR FRY/STOVETOP. Select PROOF, set temperature to 95°F, and set time for 30 minutes. Press START/STOP to begin the rise.

  • Step 7

    Roll out dough to 12 inches in diameter.

  • Step 8

    Sprinkle 1 ounce mozzarella cheese across the bottom of the 8 inch cake pan.

  • Step 9

    Transfer dough to the pan, pressing dough up the sides of the pan.

  • Step 10

    Sprinkle additional mozzarella cheese around the edge of the pan between the dough and the pan.

  • Step 11

    Let dough rest while you assemble the remaining ingredients.

  • Step 12

    Combine tomatoes, garlic, sugar, Italian seasoning, and salt.

    Sprinkle remaining mozzarella cheese on the dough.

    Sprinkle sausage evenly over the cheese in roughly 1 teaspoon pieces.

    Top sausage and cheese with tomato mixture and sprinkle Parmesan cheese over the top.

    Place the Deluxe Reversible Rack in the pot on the lower setting and place the pizza on top.

  • Step 17

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature for 350°F, and set time to 20 minutes. Press START/STOP to begin cooking (PrE will display for approximately 5 minutes as the unit steams, then the timer will start counting down).

  • Step 18

    When cooking is complete, remove the Deluxe Reversible Rack with pizza. Let cool 10 minutes before cutting into wedges.
