Cheesy Broccoli Calzones

TIP: make a double batch and freeze half of the calzones for quick dinner or lunch emergencies. Thaw to room temperature then reheat in the microwave or in a toaster oven 300 F until heated through.

Cooking mode

  • 1 head broccoli, trimmed into florets
  • 2 tablespoons extra virgin olive oil
  • 1 (about 16oz) store bought pizza dough
  • 2-3 tablespoons all-purpose flour, plus more for dusting
  • 1 egg, beaten
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 1/2 cup grated parmesan cheese
  • 1 garlic clove, grated
  • 1 grated zest of lemon
  • 1/2 teaspoon red pepper flakes
  • Cooking oil spray

Utensils

  • Step 1

    Insert the Crisp Basket and close the hood. Select AIR CRISP, set the temperature to 390F, and set the time to 12 minutes. Select START/STOP to begin preheating.  

  • Step 2

    Meanwhile, in a large bowl, toss the broccoli and olive oil until evenly coated

  • Step 3

    When the unit beeps to signify it has preheated, add the broccoli to the basket. Close the hood and cook for 6 minutes.

  • Step 4

    While the broccoli is cooking, divide the pizza dough into 4 equal pieces. Work surface with flower place the dough on the flower surface and roll each piece into an 8-inch round of even thickness. Dust your rolling pin and work surface with additional flour, as needed, to ensure the dough does not stick. Brush a thin coating of egg wash around the edge of each round.  

  • Step 5

    After 6 minutes, shake the basket of broccoli. Placed the basket back in the unit and closed the hood to resume cooking.

    Meanwhile, in a bowl, combine the mozzarella, ricotta, parmesan cheese, garlic, lemon zest, and red pepper flakes.  

  • Step 7

    After cooking is complete, add the broccoli to the cheese mixture. Spoon 1/4 of the mixture into one side of each dough. For the other half over the filling and press firmly to seal the edges together. Brush each calzone all over with the remaining egg wash. 

  • Step 8

    Select AIR CRISP, set temperature to 390, and set time to 12 minutes. Select STSRT/STOP to begin preheating. 

  • Step 9

    When the unit beeps to signify it has preheated, coat the Crisper Basket with cooking spray and place, the calzones in the basket. Cook for 10 to 12 minutes, until golden brown.
