- 1/2 cup water, for steaming
- Nonstick cooking spray
- 8 large eggs
- 1/4 cup whole milk, dairy or non-dairy
- 1 1/2 cups steamed potatoes, cut in 1/4-inch cubes
- 1 cup frozen peas
- 1/2 cup fresh cilantro, minced, plus more for garnish
- 1 shallot, peeled, finely diced
- 2 garlic cloves, peeled, minced
- 1 teaspoon fresh ginger, minced
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon kosher salt

Step 1
Pour 1/2 cup water in the pot. Heavily grease the bottom of the Ninja Multi-Purpose Pan (or 8-inch round baking pan) with nonstick cooking spray.

In a large bowl, add the eggs and milk. Whisk until frothy. Then add the potatoes, peas, cilantro, shallot, garlic, ginger, coriander, garam masala, and salt. Mix until well combined. Transfer the mixture to the prepared pan.

Place the pan on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot.

Close the lid and move the slider to STEAMCRISP. Select STEAM & BAKE, set temperature to 300°F, and set time to 20 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams, then the timer will start counting down).

When cooking is complete, carefully remove the rack with the pan. Use a knife to release the edges of the frittata from the pan, then flip the pan over onto a serving plate to remove the frittata. To serve, top with additional cilantro, if desired.
