SWEET POTATO FRITTERS

  • 4 cups sweet potato, peeled, grated
  • 1/2 red onion, finely diced (1/2 cup)
  • 1 large egg, beaten
  • 2 tablespoons finely chopped cilantro, plus more for garnish
  • 1 tablespoon harissa paste
  • Zest of 1 lime
  • 1 teaspoon kosher salt, plus more for garnish
  • 1/2 cup all-purpose flour
  • 1/2 cup water, for steaming
  • Nonstick cooking spray

YOGURT SAUCE

  • 1 cup plain full-fat Greek yogurt
  • Zest and juice of 1 lime
  • 1/2 tsp kosher salt
  • Pinch ground black pepper
  • 1 tbsp finely chopped cilantro

Utensils

  • Large Bowl
  • Step 1

Preheat a conventional oven to 200°F. Line a baking sheet with parchment paper and set aside.

  • Step 2

Place the grated sweet potato in a clean kitchen towel, then roll and squeeze out at much liquid as possible. Transfer to a large bowl.

  • Step 3

To the sweet potatoes, add the onion, egg, 2 tablespoons cilantro, harissa paste, zest of 1 lime, and 1 teaspoon salt. Mix until well combined, then add the flour and continue to mix until combined.

  • Step 4

Divide the batter into 8 equal portions, about 1/4 cup each, then flatten each portion between your palms.

  • Step 5

Add 1/2 cup water to the pot. Spray the Cook & Crisp basket with nonstick cooking spray, then place the basket in the pot. Place four of the fritters in the basket.

  • Step 6

Close the lid and move the slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 425°F, and set time to 10 minutes. Press START/STOP to begin cooking (PrE will display for approx. 7 minutes as the unit steams, then the timer will start counting down).

  • Step 7

While the fritters cook, make the yogurt sauce. In a medium bowl, whisk together yogurt, lime juice, lime zest of 1/2 a lime, 1 tablespoon cilantro, 1/2 teaspoon salt, and pepper, then set aside.

  • Step 8

When fritters are done cooking, sprinkle immediately with salt, then add to the prepared baking sheet and place in the oven to keep warm.

  • Step 9

Repeat steps 5 and 6 with the remaining four fritters. When they are done cooking, sprinkle with salt. Remove the first batch of fritters from the oven and sprinkle both batches of fritters with cilantro. Serve hot with the prepared yogurt sauce.
