Spicy Pork Lettuce Cups

These spicy pork lettuce cups are a delicious appetizer to share at your next party! They are quick to make in just 30 minutes, and they are super flavorful and delicious.

TIP: Boneless chicken thighs can be substituted for the pork tenderloin. Lay them flat on the sheet pan before basting with the sauce and increase the cooking time by 3 minutes.

Step-by-step instruction without your screen going to sleep

  • 1 medium pork tenderloin (about 1 pound), silver skin and external fat trimmed
  • 2/3 cup asian style sauce
  • 1 teaspoon cornstarch 
  • 1 medium jalapeno, seeded and minced
  • 1 can diced water chestnuts
  • 1/2 large (or one very small) red bell pepper, seeded and chopped
  • 2 scallions chopped, white and green parts separated
  • 1 head butter lettuce or boston lettuce
  • 1/2 cup roasted, chopped almonds or peanuts (optional)
  • 1/4 cup coarsely chopped cilantro (optional)

  • Step 1

    Cut the tenderloin into 1/4-inch slices and place them on the sheet pan. Based with about 3 tablespoons of Asian style sauce, stir the cornstarch into the remaining sauce and set aside.  

  • Step 2

    Select AIR ROAST, set temperature to 375, a set time to 12 minutes. Select START/PAUSE to begin preheating.  

  • Step 3

    Once the unit has preheated, slide the pan into the oven.  

  • Step 4

    After 5 minutes, remove the pan from the oven. Placed the pork slices on a cutting board. Place the jalapenos, water chestnuts, red peppers, and white parts of the scallions on the sheet pan and pour the remaining sauce over. Stir to coat the vegetables with the sauce. Return the pan to the oven and continue cooking.   

  • Step 5

    While the vegetables cook, chop the pork into small pieces. Separate the lettuce leaves, discarding any tough outer leaves and setting aside the small inner leaves for another use. You’ll want 12 to 18 leaves, depending on size and your appetite.  

  • Step 6

    After 5 minutes, remove the pan from the oven. Add the pork to the vegetables, stirring to combinereturn the pan to the oven and continue cooking for the remaining 2 minutes, until the pork is warmed back up and the sauce has reduced slightly.  

  • Step 7

    When cooking is complete, remove the pan from the oven. Place the pork and vegetables in a small serving bowl and stir in half the green parts of the scallion’s period to serve, spoon some of the pork and vegetables into each of the lettuce leaves. Top the remaining scallion greens and garnish with the nuts and cilantro (if using).
