Barbacoa Beef Lettuce Cups

These beef lettuce cups are an easy and delicious appetizer to impress your guests!

TIP: If you would like to slow-cook this recipe, you can use the slow cook function on LOW for about 8 hours.

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 2 tablespoons extra Virgin olive oil 
  • 2 lbs beef brisket or chuck roast, cut into large pieces
  • 1 cup beef broth 
  • 4 chipotle chiles in adobo sauce 
  • 2 garlic cloves
  • 1 1/2 tablespoons ground cumin
  • 1/4 cup freshly squeezed lime juice, plus wedges for serving
  • salt
  • freshly ground black pepper
  • 1 head romaine or butter lettuce, trimmed into “boats” or cups
  • toppings such as salsa, red onion, chopped cilantro, avocado, tomato, sliced lettuce, full fat sour cream

Utensils

  • Step 1

    Select SEAR/SAUTE. Add olive oil and let it heat for about one minute. Add the beef and sear the pieces, two to three minutes on each side.  

  • Step 2

    While the major searing, put the broth, Chili’s, garlic, lime juice, salt and pepper in a blender. Blend until smooth. When the beef has finished searing pour the sauce into the pot. Assemble the pressure lid, make sure the pressure release valve is in the SEAL position.   

  • Step 3

    Select PRESSURE anset to HIGH, set time to 20 minutes, select START/STOP to begin.  

  • Step 4

    When pressure cooking is complete, naturally release the pressure for 15 minutes, then quick release any remaining pressure by moving the pressure release valve to the vent position. Carefully remove the lid when the unit has finished releasing pressure.  

  • Step 5

    Using 2 Forks, shred the meat. Transfer the beef away from bowl. Carefully drain any remaining sauce and set it aside.  

  • Step 6

    Insert the basket in the pot. Close the crisping lid. Select AIR CRISP, set temperature to 390 F, and set time to 5 minutes. Select START/STOP to begin.  

  • Step 7

    When the unit is preheated, add the shredded beef to the basket.  

  • Step 8

    Close the crisping load. Select AIR CRISP, set temperature to 390 F, anset time to10 minutes. Select START/STOP to begin, stirring the meet halfway through cooking to ensure everything is crisping evenly.   

  • Step 9

    When cooking is complete, assemble the tacos. Spoon some meat into lettuce cups and drizzle with some of the reserved sauce. Top with salsa, red onion, cilantro, avocado, and lime wedges
