Niman Ranch Applewood Smoked Bacon-wrapped Peppercorn-Crusted Angus Beef Tenderloin Filet

This hearty and delicious beef tenderloin wrapped in smoky bacon is a decadent dish worthy of any celebration. Serve this with a side of grilled Brussels sprouts and mashed potatoes for a filling meal.

Tip: If you are looking to save some calories, omit the oil on the steak. You can also use Greek-style yogurt in-lieu of butter.

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 3 tablespoons whole peppercorns
  • 2 tablespoons unsalted butter, room temperature
  • One 7-ounce Niman Ranch Angus Beef Tenderloin Filet
  • 2 tablespoons canola oil
  • 2 pieces Niman Ranch Applewood Smoked Bacon
  • kosher salt, as desired

  • Step 1

    Plug thermometer into unit. Insert grill grate in unit and close hood. Select GRILL. The unit will default to HI, which is the correct temperature setting for this recipe. Select PRESET. The unit will default to BEEF, which is the correct setting for this recipe. Use the arrows to the left of the display to set desired doneness. Press START/STOP to begin preheating. 

  • Step 2

    While the unit is preheating, place peppercorns in a plastic zip bag and crush into small pieces

  • Step 3

    Add the crushed peppercorns to a small bowl with the butter and mix until fully combined

  • Step 4

    Brush the steak with oil on all sides and season with salt, as desired

  • Step 5

    Evenly cover the steak with peppercorn butter on all sides.

     

  • Step 6

    Wrap the bacon around the steak and secure with toothpicks. Insert the thermometer horizontally into the center of the thickest part of the steak. 

  • Step 7

    When unit beeps to signify it has preheated, place the bacon-wrapped steak on the grill grate, gently pressing down to maximize grill marks. Close hood over the thermometer cord. When unit beeps, and the display reads FLIP, use silicon-tipped tongs to flip the steaks. Close hood to continue cooking.

  • Step 8

    When unit beeps to signal the steak is almost done cooking, transfer steak to a plate or cutting board and allow to rest for 5 minutes. Serve immediately.
