Peppercorn Beef Tenderloin

I used to be intimated by beef tenderloin because of its cost and the pressure to make sure it is cooked just right. If you are entertaining a crowd or want to make a special meal, this beef tenderloin dish is a great, easy starting point. A beautiful, charred crust of crushed peppercorns adorns this tender, flavorful cut.

Step-by-step instruction without your screen going to sleep

  • 3/4 cup tricolored peppercorns or black peppercorns, crushed
  • 2 garlic cloves, minced
  • 2 tablespoons avocado oil
  • 1 tablespoon kosher salt
  • 1/4 cup yellow mustard or horseradish
  • 1 (3 pound) beef tenderloin, trimmed

  • Step 1

    In a small bowl, combine the crushed peppercorns, garlic, avocado oil, salt, and mustard. Using a basting brush, coat the tenderloin all over with the mustard mixture. Then press the mixture into the meat with your hands.

  • Step 2

    Plug the thermometer into the unit. Insert the Grill Grate and close the hood. Select ROAST, set the temperature to 400°F, then select PRESET. Use the arrows to the right to select BEEF. The unit will default to WELL to cook to a safe temperature. Insert the Smart Thermometer into the thickest part of the loin. Select START/STOP to begin preheating.

  • Step 3

    When the unit beeps to signify it has preheated, place the tenderloin on the Grill Grate. (If the Splatter Shield is touching the tenderloin when you close the hood, use grill mitts to remove the Grill Grate and place the tenderloin in the Cooking Pot instead.) Close the hood and cook until the Smart Thermometer indicates your desired internal temperature has been reached.

    When cooking is complete, remove the tenderloin and let rest for 10 minutes before slicing and serving.
