Vegan Meyer Lemon Thyme Sorbet

A light yet very flavorful and elegant dessert that you can easily make for company (or yourself) with the Ninja CREAMi.

TIP: If your freezer is set to a very cold temperature, the sorbet may look crumbly. If this occurs, run the RE-SPIN program to process the mixture a little more if not adding mix-ins.

Step-by-step instruction without your screen going to sleep

  • 1 tablespoon invert sugar or corn syrup
  • 1 cup water
  • 1/2 cup white sugar
  • 6 sprigs thyme
  • 3/4 cup meyer lemon juice
  • zest of 2 lemons
  • pinch of salt

Utensils

  • Medium Saucepan
  • Whisk
  • Step 1

    In a medium saucepan, add syrup, water, sugar, and thyme. Whisk to combine.

  • Step 2

    Place saucepan on stove over medium heat and bring to a simmer.

  • Step 3

    Remove thyme sprigs.

  • Step 4

    Whisk in lemon juice, lemon zest, and salt.

  • Step 5

    Remove base from heat and pour into an empty CREAMi™ Pint. Place pint into an ice bath. Once cooled, place storage lid on pint and freeze for 24 hours.

  • Step 6

    Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 7

    Select SORBET.

  • Step 8

    When processing is complete, remove sorbet from pint and serve immediately.
