Vegan Key Lime Sorbet

Step-by-step instruction without your screen going to sleep
- 1/2 cup sugar
- 1 cup water
- 1 tablespoon corn syrup
- juice of 1/2 of a lime
- 1 teaspoon lime zest
- 4 ounces graham crackers
- 2 ounces vegetable oil
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
Utensils
- Medium Saucepan
- Whisk
- Small Bowl
- Food Processor
- Sheet Pan

Step 1
In a medium saucepan, add sugar, water, and corn syrup. Whisk to combine.

Place saucepan on stove over medium heat and cook until sugar is dissolved.

Add lime juice and lime zest. Stir to combine.

Remove base from heat and pour into an empty CREAMi™ Pint up to the MAX FILL line. Place pint into an ice bath. Once cooled, place storage lid on pint and freeze for 24 hours.

Preheat oven to 325°F.

In a food processor, pulse graham crackers until fine. It’s okay to have some chunky pieces.

In a small mixing bowl, combine graham cracker crumbs with vegetable oil, salt, and brown sugar.

Spread mixture evenly on a parchment-lined sheet pan.

Bake approximately 12–15 minutes, stirring mixture every five minutes to cook evenly.

Transfer graham cracker topping to a bowl and allow to cool completely.

Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

Select SORBET.

When processing is complete, remove sorbet from pint and serve immediately, topped with graham cracker crumble.
