Vegan Caramelized Pear Ice Cream with Chocolate Chunks
This recipe is inspired by the warm flavors of winter. Caramelized fruit makes the perfect base for ice cream because it brings out the natural sweetness of the fruit. A little bit of coconut sugar and the natural sugars in the pears give this dish a sweet yet light feel. And chocolate chunks add that perfect texture and depth of flavor.
Prep Tip: Don’t worry too much about slicing the pears perfectly because they’ll eventually be blended up into the ice cream. Just try to keep the pieces similar in size for even cooking.
Swap Tip: If you don’t like/want chocolate, you can easily leave it out and you’ll still have a delicious, caramelized pear ice cream.

Step-by-step instruction without your screen going to sleep
- 3 tablespoons avocado oil
- 4 ripe pears, diced into ¼-inch pieces (approx. 3 cups)
- 1 tablespoon coconut sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 teaspoon vanilla extract
- Pinch of sea salt
- 3/4 cup unsweetened coconut cream, whisked together
- 3/4 cup unsweetened almond milk
- ½ cup vegan dark chocolate chunks, roughly chopped, for mix-in

Step 1
Place a large sauté pan over medium-high heat with avocado oil. Let the oil heat for about 1 minute, then add the pears, coconut sugar, cinnamon, and ginger and stir until evenly combined. Reduce heat to medium-low and continue to cook for 10 minutes, stirring occasionally.

Add vanilla extract and sea salt and cook for 1 minute. Remove the pan from heat and whisk in the coconut cream and almond milk. Set the mixture aside and bring to room temperature.

Once cooled, transfer the base into an empty CREAMi® Deluxe Pint. Place storage lid on pint and freeze for 24 hours.

Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

Step 5
Select FULL, then use the dial to select ICE CREAM.

Step 6
With a spoon, create a 1 ½-inch wide hole that reaches the bottom of the pint. Add chocolate chunks to the hole and process again using the MIX-IN program.

When processing is complete, remove ice cream from pint and serve immediately.
