Unicorn Rainbow Grilled Cheese

- 2 cups shredded mozzarella cheese
- Neon food coloring
- 8 slices hearty, thick bread
- 1/4 cup butter, softened

Step 1
To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Place griddle on top of grill grate so it sits flat.

Select BBQ GRIDDLE, set temperature to 375°F, and set time for 15 minutes. Close hood and press the dial to begin preheating (preheating will take approximately 10 minutes).

While unit is preheating, divide mozzarella cheese among 4 small separate bowls (approx. 1/2 cup per bowl). Take the first color of food coloring and squeeze a few drops into the first bowl of cheese. Toss it together until the cheese is tinted. Repeat with the remaining food colors and cheese. Set aside.

Butter one side of all 8 slices of bread. Set aside.

When unit beeps to signify it has preheated, open hood and place 4 slices of bread on griddle (the buttered side down). Sprinkle 2 tablespoons of each color of cheese onto the bread slices in even lines to create a rainbow. Then take the other slice of bread and top the cheese (the buttered side up).

Cook for about 3-4 minutes per side or until bread is golden and cheese is melty.

Remove from griddle, cut in half, and serve two halves per person.
