- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons brewed coffee, chilled
- 8 oz unsweetened mascarpone cheese
- 1 tablespoon cocoa powder, plus more for serving
- 1 1/2 cups powdered sugar

Step 1
Place the heavy whipping cream into the blender pitcher.

Select BLEND then HIGH and run for 15 to 30 seconds, until the cream thickens.

Remove the whipped cream from the blender, transfer to a large mixing bowl, and place in the refrigerator.

Place the sugar, mascarpone cheese, vanilla extract, coffee, and cocoa powder into the blender pitcher in the order listed.

Select BLEND then HIGH and run for 15 to 30 seconds, until smooth.

Add the coffee mixture to the bowl of chilled whipped cream, and fold together.

Spoon a small amount of the mousse into the bottom of 4 serving glasses.
Top with a dusting of cocoa powder and repeat.
