Sweet Potato Skins Two Ways: Cheddar & Bacon and Brie & Thyme
What’s a party without a potato skins appetizer? We’re kicking it up a notch by using sweet potatoes and creating two delicious topping options. The Cheddar and Bacon skins offer that classic taste while the Brie and Thyme are a fun and flavorful twist that is sure to delight guests.
TIP: Pair the Cheddar and Bacon skins with a creamy Ranch dip and top the Brie and Thyme skins with a dollop of apricot jam.

- 2 sweet potatoes
- kosher salt, as desired
- 1 tablespoon olive oil
- 1/2 cup cheddar cheese
- 4 slices cooked bacon, chopped into small pieces
- 1/2 cup brie cheese, cubed
- 1/2 tablespoon thyme
- 1 green onion, sliced

Step 1
Wash sweet potatoes and pierce 3 to 4 times with a knife. Then microwave for 6 to 8 minutes, depending on size, until they are soft.

Carefully slice potatoes lengthwise and scoop out the flesh, leaving 1/4 inch around the edges. Then brush sweet potato skins with olive oil and sprinkle with salt.

Install a crisper plate in both baskets. Place 2 potato skins in each basket. Insert baskets in unit.

Select Zone 1, select AIR FRY, set temperature to 400°F, and set time to 10 minutes. Select MATCH COOK to match Zone 2 settings to Zone 1. Press the START/PAUSE button to begin cooking.

When cooking is complete, remove skins from baskets and set on a plate. Top two of the potato skins with cheddar cheese and bacon. On the remaining two, top with brie cheese and thyme.

Place skins back in baskets. Select Zone 1, select AIR FRY, set temperature to 400°F, and set time to 3 minutes. Select MATCH COOK to match Zone 2 settings to Zone 1. Press the START/PAUSE button to begin cooking.

When cooking is complete, remove from baskets. Top bacon and cheddar skins with green onion. Serve immediately.
