Steamed Fish with Green Beans and Brown Rice

TIP: Can swap out your preferred rice. Choose a fish that is mild, meaty, and forgiving, like cod, halibut, or haddock.

LEVEL 1 (BOTTOM OF POT)

  • 2 cups brown rice, rinsed
  • 4 cups water or seafood stock
  • 2 tablespoons coconut oil

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 1 pound green beans, trimmed, halved
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons coconut oil
  • 2 teaspoons minced garlic
  • 1/2 teaspoon Kosher salt

LEVEL 3 (TOP LAYER OF RACK)

  • 4 frozen filets flaky white fish (cod, halibut, or haddock)
  • 2 tablespoons coconut oil
  • 3 green onions, roughly chopped
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon minced ginger
  • 2 teaspoons minced garlic
  • 1 teaspoon Kosher salt

TOPPINGS (optional)

  • 2 tablespoons low-sodium soy sauce, gluten-free
  • 1 tablespoon sesame oil

Utensils

  • Deluxe Reversible Rack (Both Layers)
  • Ninja® Multi-Purpose Pan or 8-inch round baking pan
  • Parchment Paper
  • Step 1

    Place all Level 1 ingredients in the pot and stir until combined. Let stand in pot for 15 minutes.

  • Step 2

    In a large bowl, place all Level 2 ingredients and toss until evenly coated. Place the vegetables in the Multi-Purpose Pan. Place the bottom layer of the Deluxe Reversible Rack in the lower position, place the pan on the rack, then place the rack in the pot.

  • Step 3

    Slide the Deluxe Layer through the lower layer’s handles. Place a 15-inch sheet of parchment paper on a flat surface. Add the fish filets to the center and evenly coat filets with oil. Sprinkle with green onions, basil, cilantro, mint, ginger, garlic, and salt. Fold the edges in to create a sealed packet. Place the packet on the top Deluxe Layer.

  • Step 4

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 385°F, and set time to 40 minutes. Press START/STOP to begin cooking (PrE will display for approx. 18 minutes as the unit steams, then the timer will start counting down).

  • Step 5

    When cooking is complete, carefully remove the entire rack with the packet and pan.

  • Step 6

    Transfer the fish filets to a serving dish and top with soy sauce and sesame oil. Serve the fish with green bean tomato mixture and brown rice.
