- 1 lb sea scallops
- 3 tablespoons hoisin sauce
- 1/2 cup toasted sesame seeds
- 6 ounces snow peas, trimmed
- 3 teaspoons vegetable oil, divided
- 1 teaspoon soy sauce
- 1 cup oven roasted mushrooms

Step 1
With a basting brush, coat the flat side of the scallops with the hoisin sauce. Place the sesame seeds in a flat dish. Place the coated sides of the scallops in the seeds, pressing each side down. Repeat with the other side of the scallops, so both flat sides are coated with hoisin sauce and sesame seeds.

In a medium bowl, tossed the snow peas with one teaspoon of vegetable oil, the sesame oil, and soy sauce.

Brush the sheet pan and with the remaining 2 teaspoons of vegetable oil. Place the scallops in the center of the pan. Arrange the snow peas in a single layer around the scallops.

Select AIR ROAST, set temperature to 375 F, and set time to 8 minutes. Select START/PAUSE to begin preheating.

Once the unit has preheated, slide the pan into the oven.

After 5 minutes, remove the pan from the oven. Using a small spatula, carefully turn the scallops over. Add the mushrooms to the peas and stir to combine. Return the pan to the oven and continue cooking.

When cooking is complete, the peas should be sizzling, and the scallops just cooked through. Remove the pan from the oven and serve.
