Seared Ahi Tuna Burrito

The golden rule applies to this dish: “If it is good on its own, it is better in a burrito.” It all starts with tuna that is perfectly seared and crisp on the outside and refreshing in the inside. You get two different types of subtle heats with the crisp fresh pickled chili, and the creamy spicy mayo. Wrap it all up in a burrito with green onions and arugula and you have an epic, hand-held, oceanic umami explosion.

Tip: Remove the ribs and seeds of the chilis before pickling them for a more mellow, less spicy version.

Quick Pickled Chilis

  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 2 medium red chilies, such as red jalapenos

Spicy Mayo

  • ½ cup mayo
  • 2 teaspoons soy sauce
  • 2 teaspoons Sriracha
  • 2 teaspoons sesame oil
  • ¼ cup chopped fresh cilantro

Burritos

  • 1 (16 ounce) ahi tuna steak, about 1 ½ inches thick
  • Kosher salt, as desired
  • 1 teaspoon sesame oil
  • 2 teaspoons sesame seeds
  • 4 extra large flour tortillas
  • 1 cup cooked jasmine rice
  • 1 bunch green onions, thinly sliced
  • 5 ounces baby arugula

  • Step 1

    In a small bowl combine the vinegar, sugar, and salt. Stir to dissolve the sugar. Add the chilies, stir well to combine, and leave to pickle for at least 30 minutes before using.

  • Step 2

    Make the spicy mayo by whisking together the mayo, soy sauce, Sriracha, sesame oil and cilantro in a small bowl. Chill the spicy mayo in the fridge while the tuna is being prepared.

  • Step 3

    Season the tuna steak on all sides with kosher salt. Brush lightly with sesame oil and sprinkle with sesame seeds.

  • Step 4

    To install the grill grate, position in flat on top of the heating element and gently press down until it sits into place, then close the hood. 

  • Step 5

    Turn dial to GRILL, set the temperature to HI, and set time to 8 minutes. Select START/STOP to begin preheating.

  • Step 6

    When the unit beeps to signify it is preheated and ADD FOOD is displayed, open the hood and add the tuna to the grill, then close hood to begin cooking. Cook tuna for 6- 8 minutes or until the tuna is medium rare, about 125F.

  • Step 7

    When cooking is complete, open hood and remove tuna from grill and let it rest for 5 minutes.

  • Step 8

    Build the burritos by slicing the tuna steak into thin pieces. Layer each burrito with ¼ cup rice, the tuna, spicy mayo, green onions, pickled chilies, and arugula. Wrap each end of the burrito in and then roll the burrito to close.

  • Step 9

    Return the burritos to the grill. Close the grill hood and set the grill temperature to HI and set time to 2 minutes. Select START/STOP to begin preheating. When unit beeps to signify it is preheated and ADD FOOD is displayed, open hood and place the burritos onto the grill and close hood. Grill each side for 1 minute.

    When cooking is complete, remove burritos from grill.
