Pizza Stuffed Chicken

Keto-friendly Pizza Stuffed Chicken prepared with Perdue Farms chicken. This decadent chicken would be a kid-approved lunch or dinner to serve with marinara and a salad.

Cooking mode

  • 4 Perdue boneless skinless chicken breasts
  • 8 ounces Shredded mozzarella cheese
  • 16 ounces Pork rind crumbs 
  • Pepperoni slices
  • Egg wash (2 large eggs lightly beaten)
  • 8 ounces marinara sauce, for serving

  • Step 1

    Butterfly the chicken breasts by cutting into the chicken horizontally, stopping ½-inch from the opposite side, then open the chicken. 

  • Step 2

    Add ¼ cup mozzarella to each butterflied chicken breast, then top with 10 slices of pepperoni. Close the chicken breasts and secure with a toothpick. 

  • Step 3

    Place the pork rind crumbs on a large plate. Dip the stuffed chicken in the egg wash and then place in the pork rind crumbs until evenly coated.

  • Step 4

    Place two chicken breasts in each Zone. Insert both baskets in unit. Select Zone 1, select AIRFRY, set temperature to 390°F , and set time to 30 minutes. Select MATCH COOK to match Zone 2 settings with Zone 1. Press START/PAUSE button to begin cooking.  

  • Step 5

    When time reaches 15 minutes, press START/PAUSE to pause the unit. Remove the baskets from the unit and flip the chicken. Reinsert the baskets in unit and press START/PAUSE resume cooking. If you prefer the chicken crispier, cook for additional time, checking in 2 minute increments. 

  • Step 6

    When cooking is complete, remove the chicken breasts from the baskets and serve with marinara dipping sauce.
