Pesto-Coated Salmon and Rice Bowls

This quick and easy salmon dish is perfect for busy weeknight dinner or lunch. It’s made in 30 minutes and is filled with healthy ingredients that are perfect for the entire family!

Tip: You can use store bought pesto and breadcrumbs or make home-made!

Cooking mode

LEVEL 1 (BOTTOM OF POT)

  • 1 cup basmati rice, rinsed
  • 2 cups water
  • 4 cloves garlic, peeled, minced
  • 2 teaspoons turmeric
  • Ground black pepper, as desired
  • Kosher salt, as desired

LEVEL 2 (CRISPER TRAY)

  • 2 frozen salmon filets (approx. 6 ounces each)
  • 1/4 cup fresh pesto
  • 3 tablespoons Italian breadcrumbs

Utensils

  • Medium Bowl
  • Measuring Cups
  • Silicone tongs
  • Step 1

    Place all level 1 ingredients in the pot and stir to combine.

  • Step 2

    Pull out the legs on the crisper tray, then place the tray in the elevated position in the pot.

  • Step 3

    In a small bowl, add the breadcrumbs and pesto, then stir to combine. Spread the pesto mixture evenly over the tops of the salmon fillets and using your hands or the back of a spoon, press the mixture to adhere. Place the salmon on the tray.

  • Step 4

    Close the lid and flip the SmartSwitch™ to RAPID COOKER.

  • Step 5

    Select SPEEDI MEALS, set temperature to 350°F, and set time to 10 minutes. Press START/STOP to begin cooking (the unit will steam for approximately 10 minutes before crisping).

  • Step 6

    When cooking is complete, transfer the salmon to a plate. Then use silicone-tipped tongs to grab the center handle and remove the tray from the unit. Transfer the rice to plates and serve warm with the salmon.
