Parmesan and Bacon Cloud Egg

- 4 large eggs
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped chives
- 1/4 cup crumbled bacon
- kosher salt and ground black pepper, as desired

- Parchment Paper
- Baking Sheet

Step 1
Preheat oven to 450°F. Line a baking sheet with parchment paper.

Separate eggs, putting whites in 1 large bowl and yolks in 4 separate small bowls.

Assemble the hand mixer attachment on the power case, then install the whisk. Place the whisk in the egg whites, press power to begin mixing on speed 1 and then gradually increase to speed 3. Mix until stiff peaks form, about 3 minutes. Fold in cheese, chives, and bacon.

Spoon the egg white mixture into 4 equal portions directly onto the parchment paper. Make a deep well in the center of each. Place the baking sheet in the oven and bake for 3 minutes.

Remove from oven and add 1 yolk to each well. Season with salt and pepper. Then place back in the oven to bake until the yolks are just set, about 2 to 3 minutes.

Remove from oven and serve immediately.
