One-Pan Scalloped Potatoes

Delicious, one-pan scalloped potatoes prepared by Chef and TV personality, Jamika Pessoa. Scalloped potatoes are a decadent side dish prepared by baking thinly sliced potatoes in a creamy sauce until they’re tender on the inside and crispy and cheesy on top. This rich dish is a holiday favorite, perfect to pair with roasted turkey and stuffing on your Thanksgiving or Christmas table.

  • 2 tablespoons Unsalted butter
  • 1/2 Onion, peeled, diced
  • 2 Cloves garlic, peeled, minced
  • 2 tablespoons All-purpose flour
  • 1 1/2 cups Milk
  • 4 oz Cream cheese
  • 1/4 cup Grated parmesan cheese
  • 1 1/2 cups Shredded Colby Jack cheese, divided
  • 1/4 teaspoon Dried thyme
  • 1.5 pounds Yukon Gold potatoes, thinly sliced
  • 1 cup Shredded mozzarella cheese
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • Fresh chopped chives or parsley, for garnish

  • Step 1

    Preheat oven to 400°F. Melt butter in the Ninja Foodi NeverStick™ 3-quart Sauté Pan and sauté onion and garlic over medium heat for 2 to 3 minutes until softened and translucent.  

  • Step 2

    Stir in flour and cook for 1 minute. Add milk and use a whisk to combine until flour is no longer visible.

  • Step 3

    Add cream cheese and whisk continuously until it melts. Add parmesan cheese and 1 cup Colby Jack cheese. As cheeses melt, sauce will begin to thicken. Season with thyme and salt and pepper as desired

  • Step 4

    Remove pan from heat and arrange one layer of potato slices in pan in an overlapping fan pattern. Lightly season tops of potatoes with salt and pepper. Top with mozzarella cheese and arrange remaining slices on top. Season tops of potatoes with salt and pepper and top with remaining Colby Jack cheese.

  • Step 5

    Place lid on pan and bake for 25 minutes.

  • Step 6

    After 25 minutes, remove lid and bake an additional 15 minutes until cheese on top is browned and potatoes are tender.

  • Step 7

    Garnish with fresh chives or parsley and serve immediately.
