Mushroom Poutine
This mushroom poutine is a delicious and fun take on the classic Canadian dish.
TIP: Classic poutine is served with cheese curds. You may be able to find them in specialty section of your grocery store. If not. Fontina cheese is a great substitute.

- 2 tablespoons unsalted butter
- 1 small yellow onion, diced
- 1 garlic clove, minced
- 8 ounces cremini mushrooms, sliced
- 1/4 cup red wine
- 3 cups vegetable stock
- 1/4 cup all-purpose flour
- Kosher salt
- Freshly ground black pepper
- 1 pound frozen French fries
- 8 ounces cheddar cheese, cubed

Step 1
Select SEAR/SAUTE and set to MED. Select START/STOP to begin. Let preheat for 3 minutes.

Add the butter, onion, and garlic. Cook, stirring occasionally, for 5 minutes. Add the mushrooms and sauté for 5 minutes. Add the wine and let it simmer and reduce for 3 minutes

In large bowl, slowly whisk together the stock and flour. Whisk this mixture into the vegetables in the pot. Cook the gravy for 10 minutes. Season with salt and pepper. Transfer the gravy to a medium bowl and set aside. Clean out the pot and return to unit.

Insert cook and crisp basket and add the French fries. Close Crisping lid.

Select AIR CRISP, set temperature to 360 F, and set time to 18 Minutes. Select START/STOP to begin.

Every 5 minutes, open the lid and remove and shake basket to ensure even cooking.

Once cooking is complete, remove fries from the basket and place in the pot. Add the cheese and stir. Cover with the gravy. Close Crisping lid.

Select AIR CRISP, set temperature to 375F, and set time 5 minutes. Select START/STOP to begin.

When cooking is complete, serve immediately.
