You will not miss the meat with these moist, flavorful mushroom burgers. This vegetarian meal is anything but bland. The savory, hearty mushroom burger topped with fresh tomato and arugula pairs perfectly with a bite of the cheesy quinoa side.

TIP: Make the burger patties ahead of time and place in the fridge until you are ready to cook.

LEVEL 1 (BOTTOM OF POT)

  • 1 cup quinoa
  • 1 1/2 cups water or stock
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter, cubed
  • Ground black pepper, as desired
  • Kosher salt, as desired

LEVEL 2 (TRAY)

  • 2 cups finely chopped fresh mushrooms
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon canola oil

SERVING (optional)

  • 4 burger buns
  • 1 tomato, sliced
  • Arugula

Utensils

  • Step 1

    To make the burger patties, add all Level 2 ingredients into a large bowl and mix until well combined. Form mixture into four equally portioned patties.

  • Step 2

    Place all Level 1 ingredients in the pot and stir to combine. Pull out the legs on the Crisper Tray, then place the tray in the elevated position in the pot. Place the burger patties on the tray.

  • Step 3

    Close the lid and flip the SmartSwitch™ to RAPID COOKER. Select SPEEDI MEALS, set temperature to 350°F, and set time for 15 minutes. Press START/STOP to begin cooking (the unit will steam for approx. 10 minutes before crisping).

  • Step 4

    After 10 minutes, remove mushroom burger patties from the unit and cover with foil. Close the lid and let quinoa continue to cook.

  • Step 5

    When cooking is complete, use silicone-tipped tongs to grab the center handle of the Crisper Tray and remove the tray from the unit. Stir quinoa. Assemble burger patties on a bun topped with tomato and arugula. Serve burgers with cheesy quinoa.
