This delicious Moroccan Salmon and Cauliflower Rice with Roasted Green Beans is an easy weeknight meal to serve your family.

MOROCCAN SPICE BLEND

  • 1 teaspoon kosher salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper

LEVEL 1 (BOTTOM OF POT)

  • 12oz 1 package frozen cauliflower rice
  • 1/2 cup vegetable broth
  • 1/4 cup golden raisins
  • 1 tablespoon olive oil
  • 3 cloves garlic, peeled, minced

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 12oz package fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

LEVEL 3 (TOP LAYER OF RACK)

  • 4 frozen salmon filets (4–6oz each)
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons prepared spice blend
  • Nonstick cooking spray

  • Step 1

    In a small bowl, add all spice blend ingredients and mix until well combined.

  • Step 2

    Place all Level 1 ingredients and 2 teaspoons of the prepared spice blend in the pot and stir until combined.

  • Step 3

    In a large bowl, add all Level 2 ingredients and toss until green beans are thoroughly coated. Place the bottom layer of the Deluxe Reversible Rack in the lower position, place the green beans perpendicular to the grate, then place the rack in the pot.

  • Step 4

    Slide the Deluxe Layer through the lower layer’s handles. Place the salmon filets on the rack, brush with oil, and coat with the remaining prepared spice blend. Spray the filets lightly with cooking spray.

  • Step 5

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 425°F, and set time to 18 minutes. Press START/STOP to begin cooking (PrE will display for approx. 12 minutes as the unit steams, then the timer will start counting down).

  • Step 6

    When cooking is complete, remove both rack layers. Season cauliflower rice with salt and pepper and serve with salmon and green beans.
